Flatbread with Mushrooms, Caramelized Onions and Goat Cheese
This Flatbread with Mushrooms, Caramelized Onions and Goat Cheese is an amazing appetizer idea but works well for a Friday night dinner for two. This recipe is from San Antonio Chef Stephen Gonzalez' cookbook, "Getcha Grub On."

- 1-2 slices Naan bread
- 1 tablespoon olive oil
- 1/2 cup goat cheese
- 1 cup sliced mushrooms
- 1 cup sliced onions
- 2 cloves garlic
- 2 Tablespoon parsley chopped
- 1 teaspoon salt
- 1 teaspoon pepper
Heat sauté pan over medium heat. Heat olive oil until shimmering.
On a medium heat, cook your onions until golden and soft (caramelized). Cook the onions for a total of 15 minutes to ensure you get that deep caramel color.
If the onions start to burn, lower the heat and add a quarter cup of water in to help the cooking process.
Add the garlic and mushrooms and continue to cook until soft. Season with the salt and pepper.
To put together, toast your Naan bread in the oven until crunchy on the outside and soft in the center.
Spoon the goat cheese evenly across the bread. Top with the vegetable mixture and parsley.
