Ali Miller's Prosciutto Egg Cups

Our friend Ali Miller, R.D., L.D., & C.D.E. in Houston uses farm fresh eggs and buttery strips of prosciutto for a fun little snack that takes minutes to prepare. Enjoy them while you’re flipping pancakes for the pack or opening presents!

Ingredients
  

  • 12 Thin Slices of Prosciutto
  • 12 Pasture Raised Eggs
  • 2 Tbsp. Chives, chopped

Instructions
 

  • Preheat the oven to 350 degrees. Line 12 muffin tins with one slice each of prosciutto, making sure it is covering the entire surface. This will replace your muffin liner and requires no greasing of the tin!
  • Carefully crack one egg into each tin. Bake for about 15-20 minutes, until yolks are set to your liking. A little runny is our pick! Remove from the oven and sprinkle with the chives.
