Gochujang Wings

This fiery recipe comes from Chef Michael A. Romo, the proprietor of MARS' Mobile Kitchen, which serves up great food like these wings on-the-go!

Ingredients
  

Marinade:

  • 10 pounds jumbo party wings
  • ½ cup gochujang paste Korean fermented red pepper paste
  • ½ cup sugar
  • ½ cup soy sauce
  • ½ cup water

Sauce:

  • 1 cup gochujang paste
  • ¼ cup mirin
  • ¼ cup blue agave nectar
  • cup brown rice vinegar
  • Sriracha sauce to taste

Instructions
 

Wings:

  • Combine gochujang and sugar, mix well.
  • Add soy sauce and water; pour over wings.
  • Marinate for 2–4 hours, then cook in 350° oven for 1½ hours or until internal temperature of 165°.
  • Drain off liquid and allow to cool.
  • Fry in 325° oil until thoroughly heated and crispy, toss in sauce to coat.

Sauce:

  • Combine all ingredients and adjust heat with sriracha.
