Gochujang Wings
This fiery recipe comes from Chef Michael A. Romo, the proprietor of MARS' Mobile Kitchen, which serves up great food like these wings on-the-go!
Marinade:
- 10 pounds jumbo party wings
- ½ cup gochujang paste Korean fermented red pepper paste
- ½ cup sugar
- ½ cup soy sauce
- ½ cup water
Sauce:
- 1 cup gochujang paste
- ¼ cup mirin
- ¼ cup blue agave nectar
- ⅓ cup brown rice vinegar
- Sriracha sauce to taste
Wings:
Combine gochujang and sugar, mix well.
Add soy sauce and water; pour over wings.
Marinate for 2–4 hours, then cook in 350° oven for 1½ hours or until internal temperature of 165°.
Drain off liquid and allow to cool.
Fry in 325° oil until thoroughly heated and crispy, toss in sauce to coat.
