Boudro's/Zinc Homemade Merguez Sausage

Ingredients
  

  • 2 tsp. Cumin Seeds roasted
  • 2 tsp. Fennel Seeds
  • 2 tsp. Coriander Seeds
  • 2 Tbsp. Paprika
  • 3 Tbsp. Ground Cayenne Pepper
  • 1 tsp. Cinnamon
  • 1 tsp. Ground Sumac optional
  • 3 lbs. Ground Lamb
  • 1/2 cup EVOO
  • 1 cup fresh cilantro minced
  • 1/2 cup Fresh Mint Leaves minced
  • 6 lg. Garlic Colves chopped
  • 4 tsp kosher salt

Dip for the Sliders:

  • 1/2 pound Fresh Goat Cheese 1 cup
  • 21/2 tbsp Mascarpone Cheese
  • 11/2 tbsp Whole Milk
  • 1/8 tsp Dried Oregano
  • 1/4 tsp Chopped Fresh Rosemary
  • 1/4 tsp Chopped Fresh Thyme
  • 1/4 tsp Chopped Fresh Dill
  • Kosher Salt & freshly Ground Pepper to taste

Instructions
 

  • Toast cumin, fennel and coriander seeds and let cool slightly and grind together. Mix all ingredients together and adjust seasoning. To shape lamb sausage, roll rubes 4'' long and 1'' wide.
