- 2 tsp. Coriander Seeds
- 2 Tbsp. Paprika
- 3 Tbsp. Ground Cayenne Pepper
- 1 tsp. Cinnamon
- 1 tsp. Ground Sumac optional
- 3 lbs. Ground Lamb
- 1/2 cup EVOO
- 1 cup fresh cilantro minced
- 1/2 cup Fresh Mint Leaves minced
- 6 lg. Garlic Colves chopped
- 4 tsp kosher salt
Dip for the Sliders:
- 1/2 pound Fresh Goat Cheese 1 cup
- 21/2 tbsp Mascarpone Cheese
- 11/2 tbsp Whole Milk
- 1/8 tsp Dried Oregano
- 1/4 tsp Chopped Fresh Rosemary
- 1/4 tsp Chopped Fresh Thyme
- 1/4 tsp Chopped Fresh Dill
- Kosher Salt & freshly Ground Pepper to taste
