American Flag Pies

Tiny Pies is known for its mini creations of big-sliced desserts. You name it, this place can make it bite-sized! For July 4th, we were lucky enough to snag the recipe for these iconic American flag berry pies. Say "Happy birthday, America!" with these delicious desserts.

Ingredients
  

  • Store-bought pie dough, for 9-inch round, plus extra for embellishments (see Notes)

Blueberry Filling:

  • cups fresh blueberries
  • 1 Tablespoon lemon juice
  • 3 Tablespoons sugar
  • 1 Tablespoon cornstarch
  • Dash of cloves
  • Dash of ginger

Strawberry-Rhubarb Filling:

  • 2 cups strawberries
  • 2 cups rhubarb
  • Juice from ½ an orange
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¼ teaspoon nutmeg
  • 3 Tablespoons cornstarch

Instructions
 

  • Toss blueberries with lemon juice. In separate bowl, whisk together sugar, spices, and cornstarch. Combine sugar mixture with blueberries.
  • Combine strawberries, rhubarb, and orange juice. In separate bowl, whisk together sugar, spices, and cornstarch, then combine with fruit.
  • Add blueberry filling to upper left corner of pie dough shell. Then add strawberry filling to the rest of the pie pan. Using extra store-bought dough (thawed), cut stars out with a star cookie cutter, then cut freehand wavy stripes. Add stars on top of blueberry filling; add stripes on top of strawberry filling.
  • Bake pie in the oven at 350℉ for approximately 45 minutes.

Notes

For ease of making and baking, this recipe yields just one standard-sized 9" pie. But if you'd prefer to make mini pies like Tiny Pies does, you can certainly do so by lining smaller tins with thawed crust dough or purchasing prepared mini pie shells. However, your bake time may need to be adjusted for smaller pies, so keep your eye on the dough so it doesn't burn as the crust begins to brown and the filling starts to bubble.
