Sweet Potato Bundt Cake

Warm Sweet Potato Whipped Bundt Cake with a maple glaze from CURRENT inside The Westin At The Woodlands! Plated with spicy Texas pecans and whipped cream in a local honey drizzle.

Ingredients
  

  • 1 cup Oil
  • 2 cups sugar
  • 4 eggs
  • 20 oz. fresh sweet potatoes steamed or boiled and mashed
  • 2 cups flour
  • ½ tsp. baking soda
  • 2 tsp. Cinnamon
  • 1 ½ tsp. pumpkin pie spice
  • ½ tsp. salt
  • 1 tsp. vanilla paste
  • 1 cup chopped pecans
  • 1 ea Orange zest

Instructions
 

  • Cream oil and sugar. Add eggs, vanilla and orange zest. Mix in sweet potatoes.
  • In a separate bowl, sift dry ingredients together. Mix in pecans and add to wet mixture.
  • Pour equal amounts of batter into the cavities of a miniature bundt pan and bake at 370 degrees for 20 minutes.
