The Peached Tortilla BBQ Brisket Tacos

southern dry rubbed brisket, creamy apple slaw, smoky roasted peach bbq sauce (gf)

Ingredients
  

  • 3-4 lb pieces Brisket

Braising Liquid:

  • 1 cup Maker's Mark
  • 3 cups Beef Broth
  • 1 cup water
  • 1 yellow onion chopped
  • 4 garlic cloves whole or chopped

Rub:

  • 2 tbsp kosher salt
  • 1 tbsp Black Pepper
  • 2 tsp Mustard Powder
  • 2 tbsps chili powder
  • 1 tbsps Garlic Powder
  • 1 tbsp Onion Powder
  • 4 tbsp brown sugar
  • 1 bay leaves

Creamy Apple Slaw:

  • 1 cup Fennel 1, sliced thin
  • 1 apple Green, julienned
  • 1 cup Cabbage Green, sliced thin on mandolin
  • 1/2 cup Carrots Shredded
  • 1/8 cup Rice Wine Vinegar
  • 1/8 cup lemon juice
  • 3/4 cup mayonnaise
  • 1/4 cup sugar
  • Kosher Salt & Black Pepper to taste

Smoky Roasted Peach BBQ Sauce:

  • 6 oz Peach Preserves
  • 12 oz ketchup
  • 1/2 Onion chopped
  • kosher salt to taste
  • Black Pepper to taste
  • 1 tablespoon Vegetable oil

Instructions
 

  • Set your oven for 350 degrees. Trim brisket to the level of fat and marbling of your preference. Grind rub ingredients in spice grinder, then spread over brisket moving the rub mixture into the meat.
  • Turn cast iron skillet on high heat and sear dry-rubbed brisket on both sides for 8-10 minutes. Make sure to get a good sear but to not burn the meat. Set aside.
  • Combine braising liquid ingredients into oven proof pot. Add brisket piece. The braising liquid should come halfway up the brisket piece (it should not cover the brisket). Place in oven for 3.5 hours.

Creamy Apple Slaw:

  • Mix ingredients. Add more mayonnaise if you are unhappy with the consistency of the slaw.

Smoky Roasted Peach BBQ Sauce:

  • On medium heat, heat oil then add onions. Sautee onions until they start to become translucent. Add peach preserves and ketchup.
  • Turn heat down to low and simmer sauce for fifteen to twenty minutes. Add salt and pepper to taste.
