Boudro's Tequila-Cured Salmon

What a great party food! Talk about impressing your guests and that significant other. Cure your own salmon to prepare this delicious bruschetta from Boudro’s.

Ingredients
  

  • 1 pound fresh salmon
  • ½ cup brown sugar
  • ½ cup kosher salt
  • ½ cup Fresh dill chopped
  • ½ cup Fresh cilantro chopped
  • 2 cups tequila (approximately)
  • Cheesecloth, to wrap fish

Instructions
 

  • On a rimmed baking sheet, lay a cheesecloth and place the salmon skin-side down.
  • Pat the salmon dry with paper towels. Add an even layer of salt and dark brown sugar. Then sprinkle and press in chopped dill and cilantro and tightly wrap the salmon all up in the cheesecloth.
  • Put in the refrigerate and cure for 48 hours (turn over after 24 hours).
  • After your salmon is done curing, wipe away the salt, sugar, and herb mixture. Rinse off the fish with your tequila of choice.
  • Slice salmon thinly on a diagonal and serve as a topping on bruschetta. Delicious!
