Ali Miller's Avocado Chocolate Mousse
This deliciously easy recipe comes to us from our friend, Ali Miller, R.D., L.D., and C.D.E. (Certified Diabetes Educator). She assures us, "We know what you’re thinking — delicious and healthy? Too good to be true, right? No! Avocados are higher in potassium than bananas and are also a great source of vitamins E, K and folate. The fatty acids found in avocados help protect against prostate and breast cancers, as well as heart disease, making this scrumptious dessert a healthy one, too!"
Ingredients
- 2 avocados
- 1/2 cup of dates Madjool
- 3-4 tablespoons of 100% raw organic cocao powder
- 1-2 tablespoons of vanilla
- Pinch of sea salt
Instructions
- Simple! Blend all ingredients together in a food processor. Scrape the sides with a spatula and continue to blend until smooth. Top it off with sea salt and serve with fresh fruit.
