- 4 oz basil
- ¼ cup garlic
- 1 cup olive oil
- ¼ cup Parmesan
- 1 Tb Fresh Ground Pepper
- 1 tsp kosher salt

Instructions
- Roast off beets. Cool, peel, slice. Top with sliced fresh mozzarella, pesto, and reduced balsamic.
For the Pesto
- Blend all ingredients in food processor.
