Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes.
Drain and set in the refrigerator to cool.
Gently combine the remaining ingredients together with the potatoes in a large mix bowl until desired consistency.
Serve immediately or cover and refrigerate.

- 1 XX medium yellow onion
- 6 XX Boiled eggs
- 1 jar XX green olives medium sized
- 1 jar XX Hellman's Real Mayo 8 oz.
- Salt & Pepper to taste
