Chicken Fried Brussels Sprouts
Chicken Fried Brussels Sprouts with Duck Fat Peppered Gravy from my friends at Kirby's Steakhouse! A scrumptious twist to this glorified southern side.
Ingredients
Brussels Sprouts:
- 8 oz Brussels sprouts trimmed and cut in halves
- 3 cup Vegetable oil
Duck Fat Peppered Gravy:
- 4 tbsp duck fat
- 4 tbsp flour
- 1 tsp salt
- 1 tbsp Course Cracked Pepper
- 2 ½ cup milk
Milk Dredge:
- 4 cup milk
- 6 eggs whole and whisked
Flour Dredge:
- 3 cup flour
- 1 tbsp Season Salt
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tbsp Table Ground Black Pepper
- 1 cup Panko Japanese Bread Crumbs
Instructions
For the Duck Fat Peppered Gravy:
- Melt Fat in sauce pan on low heat. Stir in flour salt, pepper until smooth and bubbly. Stir in milk. Heat to boil on medium heat. Consistently stir until smooth and thick (1-2 minutes.)
For the Milk Dredge:
- Mix all ingredients thoroughly.
For the Flour Dredge:
- Mix all ingredients thoroughly.
Final Procedure:
- Place Brussels sprouts into milk dredge. Then remove into flour dredge and lightly coat by hand. Place in Dutch oven with vegetable oil (heated to 350 degrees) until crisp and golden. Ladle gravy onto plate and then place Brussels sprouts on top.
