Forthright's Turkey Sandwich
Take your traditional turkey sandwich up a notch with sweet bacon jam. The sweet plus savory nature complements the meat perfectly. It adds an extra step, but it’s so worth it! From Chef Ashley Neave at Forthright Cafe in Downtown Austin.
Ingredients
Bacon Jam:
- 1 lb smoked bacon cut into small pieces
- 3 oz finely chopped white onions
- 1/2 cup apple cider vinegar
- 3 Tbsp brown sugar
- Salt and pepper to taste
Sandwich:
- 2 pieces nine grain bread from your local bakery
- 4 ounces oven-roasted turkey sliced
- 1 ounce bacon jam
- fresh vine tomato sliced
- fresh lettuce (any lettuce you like)
- 1 ounce whole grain mustard
Instructions
For the Bacon Jam:
- Cook the bacon and onion until the bacon is nearly crispy. Add the Apple Cider vinegar and reduce by half. Then, add the brown sugar and boil for three minutes. Season with salt and pepper to taste.
For the Sandwich:
- Toast the bread on both sides. Spread bacon jam on one side and whole grain mustard on the other. Lay the sliced turkey and tomatoes on top and season tomatoes with salt and pepper. Add lettuce and serve. Also, you can leave the lettuce, pop the sandwich in the oven for a few minutes to warm turkey for a hot sandwich, adding the lettuce at the end.
