This vibrant and tangy tuna tartare appetizer comes from J Prime in San Antonio. It’s a simple preparation that is dressed up with tiny bits of fresh fruit. If you do not have a biscuit cutter that would work as a ring mold, then you can cut the top and bottom off of a tuna can and use that.
In a small bowl, gently combine the tuna with the ginger, soy, and sesame oil. Press the avocado into the bottom of a 3-inch ring mold or round biscuit cutter. Top with the tuna mixture and press into the mold. Top with diced pineapple and then carefully remove the ring mold. Garnish with sesame seeds and assorted sliced fruit like strawberries, raspberries, blueberries, kiwi fruit, Madarin orange slices . Serve with crispy wontons for dipping.
