Place chicken flat in a zip lock bag and pound out.
Season chicken on both sides with salt and pepper.
Place chicken in flour, then egg, then breadcrumbs making sure they are completely coated.
Heat olive oil in a large skillet over medium high heat. Carefully place chicken in skillet. Pan fry until deep golden brown on each side and cooked through.
Place chicken separated on a nonstick baking sheet. Place 1/2 cup of tomato sauce on each piece of chicken. Spread one cup of cheese evenly on each piece of chicken. Place in oven until cheese is bubbly. Place remaining sauce on each piece of chicken in a thin strip so you can still see the cheese.
