Maudie's is known for tasty Tex-Mex that's been lighting up Austin tastebuds for 50 years! Now, they're sharing the secrets to enjoying tasty Tex-Mex without all the guilt. Make their protein and fiber-packed Power Bowl that's quickly become Austin's "go-to" meal for healthy Tex-Mex.
Put all marinade ingredients and the 2 lbs of diced chicken into a Ziploc. Seal and marinate for 1-2 hours. In a large skillet heated to medium-high, add oil. Add onion and marinated chicken. Cook until nicely browned and until chicken registers 165 degrees Fahrenheit when a thermometer is inserted.
Pico De Gallo
Add the serrano peppers, onion and salt to a mixing bowl and give it a good stir.
Add the cilantro and mix. Add the diced Romas, lime juice and toss until all the ingredients are well mixed.
Easy Jalapeño Ranch
Add the jalapenos plus their juice and the cilantro to a blender or food processor. Puree until smooth. Pour the ranch into a bowl and add the jalapeño puree.
Layer in the Spinach then the rice to create a level base. Add the remaining bowl ingredients in strips across the top.
Serve with the jalapeño ranch—and a margarita!
