Rathskeller's Chicken Artichoke Pasta

Ingredients
- 2 ounces fettuccine noodles
- 2 teaspoons olive oil
- Salt and pepper for seasoning
- 6 ounces boneless, skinless chicken breast
- 1 teaspoon lemon juice
- 2 ounces white wine
- 1 ounce capers
- 6 artichoke hearts quarters
- 2 Tablespoons scampi butter (recipe below)
Scampi Butter
- 1 pound butter softened
- ½ Tablespoon chili powder
- ½ Tablespoon paprika
- ¼ ounce Tabasco sauce
- ½ Tablespoon salt and pepper mix
- ½ Tablespoon fresh ground garlic
- 2 Tablespoons lemon juice
Instructions
- Cook fettuccine noodles as directed on box.
- Heat olive oil in a saucepan.
- Lightly salt and pepper the chicken breast and sauté over medium heat until almost cooked through.
- Add lemon juice, white wine, capers, and artichoke hearts. Then add 1 rounded tablespoon of scampi butter.
- Once melted, pour chicken mixture over fettucine noodles and serve.
