
Chess Club Cafe Chorizo Hash

Ingredients
- 2 oz caramelized onion
- 5 oz Chorizo
- 1/4 oz diced jalapeno
- 4 oz cooked red or Yukon Gold potatoes Small diced, with skins intact. We boiled the potatoes until just tender, but you could also sauté with oil until golden brown.
- 2 eggs
- Salt and Pepper to taste
Instructions
- Briefly sweat onions and jalapenos then add chorizo. Let the Chorizo sear until it is nicely browned before you flip or stir. Cook Chorizo until cooked through.
- Then add pre-cooked potatoes and sauté for 2-2 ½ minutes combining completely.
- In a separate pan cook the 2 eggs as desired. Gently lay eggs on top of chorizo hash.
