
Compound Butter from Blü Prime Steakhouse
Ingredients
- 2 sticks butter, unsalted
- 1 tsp granulated garlic
- ½ tsp Kosher salt
- 1 tsp parsley
Instructions
- In a stand mixer, add unsalted butter and cream the butter with the paddle attachment.
- Once smooth and creamy, add all the rest of the ingredients and mix.
- Shape desired amount of butter into quenelles. (See note)
- Reserve remaining butter in plastic.
Notes
Note: Butter quenelles are a refined French culinary technique used to create oval-shaped dollops of butter. Forming quenelles takes a little practice, but the process is simple. Use one spoon to scoop up the softened butter, then pass it between two spoons, gently shaping it into a smooth oval. Repeating this motion helps create the classic, refined quenelle shape.
