Freedmen's Smoked Tri-Tip
This sizzling sirloin is a smoky celebration of everything we love about Texas barbecue. Tender, juicy and just plain delicious! Compliments of the folks at Freedmen's in Austin.
Ingredients
- 1 whole Tri-tip
Rub Ratio:
- 1/2 part Celery Salt
- 1 part kosher salt
- 3 parts Coarse Black Pepper
Instructions
- Heat Smoker to 300.
- Place tri-tip on front of smoker near firebox, cook for first 10 minutes at high heat.
- After 10 minutes move to back of smoker and allow try tip to finish. Pull the tri-tip when the middle reads 130-135*(depending on personal preference), and allow to rest for 15 minutes before slicing against the grain.
For the Rub:
- Mix well, apply evenly on all sides.
