
Local Roots’ Toasted Pimento Cheese Sandwich
This crazy-popular dish from Local Roots is sure to satisfy any craving for ooey-gooey cheese! This sandwich is incredibly easy to make, and the extra kick of jalapeño and bacon make it a crowd-pleaser for everyone!
Ingredients
- 3 cups shredded mild cheddar
- 3 cups shredded sharp cheddar
- 16 ounces cream cheese
- 2 cups chopped bacon
- 1 cup minced jalapeños
- One 4-ounce jar diced pimentos drained
- ¼ cup mayonnaise
- 8 slices of your favorite bread
- softened unsalted butter for spreading
Instructions
- Preheat your oven to 450 degrees.
- In a large mixing bowl, combine the mild and sharp cheddar, cream cheese, bacon, jalapeño, pimentos and mayo.
- Combine the mixture with a spatula or your hands until it’s fully incorporated.
- Spread some of the pimento cheese mixture onto a slice of bread until it’s completely covered. Place the other slice of bread on top and place the sandwich on a baking sheet.
- Spread the softened butter on the bread then place the sandwich in the oven for 3 to 5 minutes, or until the edges of the bread start to brown and the cheese is starting to melt.
- Slice your sandwich and enjoy! Feel free to have any extra pimento cheese as a snack with crackers!
