Moroccan Tartine
A tartine is just a fancy French word for open-face sandwich. 🙂 It's topped with spreadable ingredients, in this case a really delish homemade hummus. This Moroccan Tartine from My Name is Joe in Austin sports several variety of beets, plus cucumber and roasted hazelnuts.
Ingredients
- 4 slices country style sourdough bread toasted
- 1 cup hazelnut hummus *recipe follows*
- 2 ounces Red Beets sliced
- 1 ounce golden beats sliced
- 2 oz English Cucumbers sliced
- 1 teaspoon ras el hanout
- 1/2 teaspoon sumac
- 20 roasted hazelnuts chopped in half
- 4 leaves fresh dill
- 4 sprigs fresh parsley
- 4 green onions thinly sliced
- olive oil for dressing beets
- lemon for dressing beets
Hazelnut Hummus:
- 1 pint cooked chickpeas drained
- 3 tablespoons tahini paste
- 1 clove garlic
- 1 tablespoon smoked paprika
- juice 1 lemon
- 2 tablespoons hazelnut oil
Instructions
For the Hazelnut Hummus:
- In food processor, blend together all ingredients until it becomes a thick but smooth paste. Adjust salt and lemon to taste and transfer to a non reactive container.
