Smoked Ribeye Tomahawk from Tillie's
Ingredients
- 1 bone-in ribeye tomahawk, around 2½ pounds
- ½ cup extra virgin olive oil, divided
- 1 cup red meat rub (your favorite store-bought rub)
- salt and pepper, to taste
Instructions
- Light smoker with your favorite wood and let it get to around 200℉.
- Preheat oven to 250℉.
- Meanwhile, rub the tomahawk with ¼ cup oil and then rub with the meat rub. Once smoker is up to temperature, add the tomahawk and cook for about 40 minutes.
- After smoking, transfer tomahawk to the oven and insert a probe thermometer into the thickest part of the meat. Cook until internal temperature is 110℉. Pull and let rest for 10 minutes.
- Meanwhile, heat a cast iron pan over high heat without oil. Heat until it gets very hot.
- Once the cast iron pan is very hot, add about ¼ cup of the oil to the pan and sear both sides of the tomahawk.
