Ellen's Blackened Shrimp and Grits

Ingredients
  

  • 1 cup quick grits
  • 2 cups Shredded Cheddar Cheese
  • 4 cups water
  • 8 raw, peeled shrimp
  • 1 tablespoon Cajun blackened seasoning
  • 2 tablespoon Vegetable oil
  • 2 cups Fresh Spinach
  • 1/4 cup chopped TOMATOES
  • 1/4 cup chopped bacon
  • 1 tsp chopped garlic

Instructions
 

Cheese Grits

  • Bring 4 cups of water to a boil with 1 tablespoon salt.
  • Stir in 1 cup of quick grits and boil for 5 minutes, stirring occasionally.
  • Remove from heat and stir in 2 cups shredded cheddar cheese.
  • Add salt to taste.

Shrimp

  • Toss raw, peeled shrimp in 1 tablespoon of Cajun blackened seasoning.
  • Heat 1 tablespoon vegetable oil in saute pan.
  • Add seasoned shrimp to pan and cook until done, flipping halfway through. (Approximately 3 min).

Vegetables

  • Heat 1 tablespoon vegetable oil in saute pan.
  • Add garlic, bacon, tomato, and spinach to pan and sautee for 1 minute or until spinach starts to wilt. Stir occasionally.
  • Plate grits, add vegetable saute mix, top with shrimp.
