Ellen's Blackened Shrimp and Grits

Ingredients

quick grits

Vegetable oil

Fresh Spinach

chopped bacon

Instructions
Cheese Grits
Bring 4 cups of water to a boil with 1 tablespoon salt.
Stir in 1 cup of quick grits and boil for 5 minutes, stirring occasionally.
Remove from heat and stir in 2 cups shredded cheddar cheese.
Add salt to taste.
Shrimp
Toss raw, peeled shrimp in 1 tablespoon of Cajun blackened seasoning.
Heat 1 tablespoon vegetable oil in saute pan.
Add seasoned shrimp to pan and cook until done, flipping halfway through. (Approximately 3 min).
Vegetables
Heat 1 tablespoon vegetable oil in saute pan.
Add garlic, bacon, tomato, and spinach to pan and sautee for 1 minute or until spinach starts to wilt. Stir occasionally.
Plate grits, add vegetable saute mix, top with shrimp.
