Lightened Up Jalapeño Pimento Cheese

How about this for an easy party recipe with no guilt? We promise, you won't miss out on flavor with this lightened up version of Pimento Cheese Dip.

Ingredients
  

  • 1 8 oz. tub of whipped reduced fat cream cheese softened
  • 2/3 cup of good quality light mayonnaise, be sure it’s not mayo-like “dressing” which tends to be sweet
  • ¾ cup 2% reduced-fat sharp cheddar cheese
  • ¼ cup grated parmesan in the can
  • ½ teaspoon of garlic salt
  • ¼ cup minced hot jalapeno slices jarred, if you’re not a fan of too much heat get mild
  • Five green onions, sliced (white and light green parts only), scallions
  • cloves Two large or three mediumof fresh garlic

Instructions
 

  • Place softened cream cheese in a mixing bowl and whip with an electric hand mixer until smooth. Add ½ cup of the light mayo to the cream cheese and whip until combined and smooth.
  • Peel the cloves of garlic & grate on a zester then add to the cream cheese mixture. Add ½ teaspoon of garlic salt. Whip again to combine.
  • Mince ¼ cup of sliced jalapenos & add to the mixture. If you want the spread a bit looser you can add a splash of the jalapeno juice. Add green onions.
  • Beat on low to combine gently so as not to tear up your scallions and peppers. Add ¾ cup of the shredded sharp cheddar and the parmesan and beat on low one last time to combine. Taste for seasoning. Spread is best if allowed to chill in the fridge for a few hours to let the flavors develop and marry.
