Blood Orange 'EVOO' Cake

We're in love with this brand new recipe for Blood Orange 'EVOO' Cake from Con' Olio Oils & Vinegars in Austin. This makes one half-sheet pan.

Ingredients
  

  • ½ cup & 1.5 tablespoons Con Olio Blood Orange EVOO Can purchase several brands on Amazon, or infuse your own using blood orange or orange extract and flavor to taste.
  • 4 eggs
  • 1 cup & 2 tablespoons Greek yogurt
  • 1⅓ cups sugar granulated
  • Zest of 3 blood oranges
  • 1 tablespoon vanilla extract
  • ½ cup & 3 tablespoons cake flour
  • 6 tablespoons & 1 teaspoon Durum Wheat Flour
  • 6 tablespoons & 1 teaspoon A/P Flour
  • ½ tablespoon & 1 teaspoon baking powder
  • teaspoon kosher salt

Instructions
 

  • Combine the dry Ingredients and mix together.
  • Combine EVOO, eggs, yogurt, sugar, and blood orange zest. Whisk together till homogenous.
  • Fold the dry ingredients into the wet ingredients till combined.
  • Lightly oil a half sheet pan and place the parchment on top of the oil. Then oil the top of the parchment as well. Place the batter in the pan and spread evenly.
  • Bake in a pre-heated oven at 350F. Bake for 10min, then rotate the cake in the oven 180 degrees, and proceed to bake another 10min. It should not get any color on top. Remove from the oven and let cool.
  • In a bowl combine two parts EVOO and one part Blood Orange Juice. Mix this together and brush onto the cooled cake. Cut into desired shape and serve.
