Good Dog's Deli Dog with House Giardiniera

Ingredients
  

  • 3 carrots, diced
  • 1 cauliflower, diced
  • 2 green bell peppers, diced
  • 2 red bell peppers, diced
  • 1 1/2 Tbsp. minced garlic
  • 1/2 cup sliced fresno peppers
  • 1 Tbsp. oregano
  • 1 1/2 Tbsp. salt
  • 1 Tbsp. red pepper flakes
  • 3 1/2 cups Red Wine Vinegar
  • 3 1/2 cups extra virgin olive oil

Hot Dogs

  • 4-6 Hot Dogs of your choice
  • 4-6 Buns of your choice
  • 4-6 Slices of provolone cheese for garnish
  • Mixed Greens for garnish
  • Diced tomatoes for garnish
  • Celery Salt for garnish
  • Whole grain mustard for garnish

Instructions
 

House Giardiniera

  • Combine carrots, cauliflower, and bell peppers in bowl. Add garlic, fresno peppers, oregano, salt, and red pepper flakes. Mix to combine.
  • Add olive oil and red wine vinegar to cover veggies. Mix thoroughly and place in the refrigerator overnight. Will last several weeks in the refrigerator.

Hot Dog Assembly

  • Melt provolone around hot dog, place in bun, and garnish.
