Spicy Rum Red Velvet Cake

This version of Rails' rich & creamy Red Velvet Cake comes with an extra kick! We've added rum extract as well as chile chipotle powder to our mixture from H-E-B Cooking Connection for a twist on this devilish delight...

Ingredients
  

  • 1 box Red Velvet Cake Mix
  • 1 tbsp McCormick's Chile Chipotle Powder
  • 1 cup white chocolate chips
  • 1 tsp Rum Extract
  • 1 bar HEB Cream Cheese room temperature
  • ¾ cup butter room temperature

Instructions
 

  • Bake cake according to directions on box, adding chile chipotle powder to batter.
  • Remove and allow to cool (place cake in freezer up to 6 hours for easier handling).
  • In a mixer, whip cream cheese till on medium speed until fluffy about 2 minutes.
  • By double boil method, melt down chocolate chips. Add melted chocolate, rum extract, and butter to mixer on medium speed, and mix until creamy and smooth.
  • Ice cake whole or cut into mini cakes and dress them up as desired.
