Southwest Watermelon Glazed Chicken

Texas fresh from start to finish! This delicious chicken dish is low in fat, high in fiber, and incredibly easy to make. Plus, the ingredients are all local Texas homegrown products.

Ingredients
  

  • 4 pieces H-E-B Natural Boneless, Skinless Chicken Breasts
  • ½ cup Cookwell & Company Watermelon Vinaigrette
  • 2 Tablespoons Adams Reserve Southwest Ancho Rub
  • 2 Tablespoons Ottavio Olive Oil or Grapeseed Oil
  • Fresh chopped cilantro for garnish

Instructions
 

  • Heat a large skillet on medium-high heat. Add 2 tablespoons olive or grapeseed oil.
  • Season chicken with the Adams Reserve rub.
  • Pan-sauté the chicken breasts for 5 to 7 minutes on one side, depending on thickness of breasts. For chicken tenders, only about 3 to 4 minutes on one side. When you turn over chicken to other side, add Cookwell & Company vinaigrette to skillet, then finish cooking the other side, again from 5 to 7 minutes for breasts, 3 to 4 minutes for tenders.
  • Garnish with cilantro. Serve warm and enjoy.
