White Bean and Sage Soup

Ingredients
  

  • 4 tablespoons extra-virgin olive oil
  • 5 cloves garlic chopped
  • 3 fresh sage leaves
  • 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes, to taste
  • 3/4 cup white wine
  • 3 (15-ounce) cans cannellini or great northern white beans, rinsed and drained
  • 2 (14-ounce) cans chicken broth
  • 1 cup thinly sliced smoked sausage (optional)

Garnish

  • Garlic chives, or onion chives thinly sliced
  • Freshly grated Reggiano-Parmigiano cheese
  • Best quality extra-virgin olive oil
