Z’s Wood Fired Pizza’s Boerne Wurst Pizza

Z’s Wood Fired Pizza in Boerne has some of the most unique pizzas in Texas, including one with sauerkraut and smoked sausage! Here, the Boerne Wurst Pizza is piled high with pure German-Texas toppings that’ll be a welcome change from your typical pepperoni and cheese.

Ingredients
  

  • All-purpose flour for dusting
  • 12 ounces pizza dough store-bought or homemade
  • One 28-ounce can whole peeled tomatoes
  • ¼ cup fresh basil leaves
  • 3 anchovy fillets
  • 4 cloves of garlic
  • ½ small jalapeño stemmed and seeded
  • Kosher salt
  • 2 cups shredded fresh mozzarella
  • ½ cup sauerkraut
  • 2 cups sliced smoked kielbasa sausage
  • ¾ cup shredded smoked Gouda

Instructions
 

  • Preheat your oven to 425°F and place a pizza stone or rimmed baking sheet in the oven while it preheats. On a lightly floured piece of parchment paper, roll out your dough to one 14-inch round.
  • In a food processor, puree the tomatoes with the basil, anchovies, garlic, and jalapeño. Season with salt.
  • Spoon ¾ cup of the sauce onto the center of your dough. Spread in a thin, even layer, leaving ½-inch border. Reserve the remaining sauce for more pizzas. Top with the sauerkraut and smoked sausage. Scatter the smoked Gouda over the top.
  • Transfer the pizza to the oven and bake until it is puffed and golden brown and the cheese is bubbling, about 10 minutes. Transfer to a cutting board and let cool slightly. Cut into slices and enjoy!
