Dirty Rice from Stingaree

Ingredients
  

  • 5 lbs white rice
  • ½ lb ground pork
  • ½ lb chicken liver
  • ½ lb ground hamburger meat
  • ¼ lb chopped celery
  • ¼ lb chopped onion
  • ¼ lb chopped green pepper
  • 1 tsp Tony's Seasoning
  • 1 Tbsp Cajun spice
  • 14 oz seafood stock (Stingaree makes homemade, or you can find in store)  

Instructions
 

  • Prepare the rice according to package directions. Set aside. 
  • In a large bowl, mix together ground pork, chicken liver, and hamburger meat. 
  • In a large pot over high heat, cook meat mixture until browned.
  • Turn the heat down to low and add celery, onion, and green pepper. Continue cooking until vegetables begin to soften, being careful to stir constantly, about 4 to 5 minutes.
  • After vegetables have softened, add spices and seafood stock and stir to combine. Simmer for an additional 10 to 15 minutes. 
  • Add the cooked rice into the pot and stir to combine. Take off the heat and serve.
