Goat Burger from Cibolo Creek Brewing Company

Ingredients
  

  • ½ lb ground J.J. O’Brien Ranch grass-fed beef
  • 1 lb ground Windy Hills Foods goat 
  • 6 Tbsp Kosher salt
  • Tbsp paprika
  • Tbsp black pepper
  • 3 tsp granulated garlic
  • 2 tsp white pepper
  • 4 toasted pretzel buns
  • house mayonnaise (recipe below)
  • arugula
  • 2 oz 3-cheese spread (recipe below)
  • 8 fried onion rings (recipe below)
  • bread and butter pickles

House Mayonnaise

  • 2 large eggs
  • 1 Tbsp house mustard or whole grain mustard
  • 2 cloves garlic
  • 1 Tbsp apple cider vinegar
  • 1 cup sunflower oil (or any neutral oil)
  • Kosher salt and black pepper to taste

3-Cheese Spread

  • 2 oz cream cheese (softened or whipped)
  • 2 oz pepper jack cheese, shredded
  • 2 oz cheddar cheese, shredded
  • 3 Tbsp House mayonnaise (see recipe below)
  • 1 Tbsp bread and butter pickles, minced
  • 1 Tbsp bread and butter pickle brine
  • Pinch red pepper flakes, to taste

Onion Rings

  • 1 large yellow (or white) onion
  • 1 quart buttermilk
  • 1 quart chicken fry flour (recipe below)

Chicken Fry Flour

  • cups all-purpose flour
  • 3 Tbsp paprika
  • 3 Tbsp salt
  • 3 Tbsp pepper

Instructions
 

Burger

  • Mix ground beef and goat well and shape or press into 6 oz patties. 
  • In a small bowl, combine and mix kosher salt, paprika, black pepper, garlic, and white pepper to make burger seasoning. 
  • Season patties on both sides and place either in a preheated oiled cast iron pan or on a hot grill. For medium rare, hit an internal temperature of roughly 145℉.
  • Lightly toast pretzel buns to begin preparing your burger. 
  • Before removing the patty from heat, smear roughly 2 oz of cheese spread on the patty and then remove to rest. 
  • Spread house-made mayo on both sides of the pretzel bun and add a nest of arugula to the bottom bun.
  • Place the patty on top of the bed of arugula and top with two crispy fried onion rings.
  • Place the top bun on and skewer a delicious bread and butter pickle to your Cibolo Creek Brewing copycat burger.

House Mayonnaise

  • Add all ingredients to a blender except for the oil. Blend and add oil slowly to emulsify and then season to taste.

3-Cheese Spread

  • Combine and mix all ingredients well and store in the refrigerator.

Onion Rings

  • Slice onion into roughly ¼-inch slices and disassemble into rings.
  • Soak rings in buttermilk and remove, allowing excess to drip off.
  • Toss in fry flour and fry until golden brown.

Chicken Fry Flour

  • Combine and mix all ingredients.
