Dining at the Westin La Cantera is fresh – fresh ingredients from farm to table. Get ready for springtime with a delicious crab and watermelon salad from Brannon’s Cafe at the Westin. The hint of horseradish, arugula and melon will entice you…so much so, you’ll probably order a glass of sauvignon blanc to go with! Place crab meat, diced honeydew melon and diced tomato into a bowl and salt to taste. For the horseradish vinaigrette, pour cream into a mixing bowl. With a spoon, mix in the horseradish. Slowly pour in the extra virgin olive oil while stirring with the spoon. Season with salt. Mix with crab/melon/tomato.
Serve chilled over 3-inch by 3-inch square of watermelon, approximately 1/2-inch thick. Garnish with arugala leaves.
