Maudie's Tex-Mex Power Bowls
Maudie's is known for tasty Tex-Mex that's been lighting up Austin tastebuds for 50 years! Now, they're sharing the secrets to enjoying tasty Tex-Mex without all the guilt. Make their protein and fiber-packed Power Bowl that's quickly become Austin's "go-to" meal for healthy Tex-Mex.
Ingredients
Power Bowl
- 8 ounces Spinach
- 4 cups Spanish rice Use any recipe or rice mix you choose
- 12 slices of avocado
- 2 cups Pico de Gallo Recipe follows
- 4 ounces shredded jack cheese
- 1 cup whole black beans warm but strained
- 2 lbs of diced chicken Use your favorite cut. Maudie's uses chicken tenders. Marinade Recipe follows
- Jalapeño ranch Recipe Follows
Chicken Fajita Marinade
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoon vegetable oil
Pico De Gallo
- ¼ Serrano pepper minced
- ¼ large onion diced
- Salt to taste
- A few springs Cilantro de-stemmed and coarsely chopped
- 3-4 Large Roma tomatoes diced
- 1 teaspoon Lime juice
Easy Jalapeño Ranch
- 12 ounces bottle of your favorite ranch dressing
- 4 ounces of pickled jalapenos with juice
- A few sprigs of cilantro no stems
- 1/2 inch onion sliced into 1/4strips
- 1 tablespoon vegetable or canola oil
Instructions
Chicken Fajitas
- Put all marinade ingredients and the 2 lbs of diced chicken into a Ziploc. Seal and marinate for 1-2 hours. In a large skillet heated to medium-high, add oil. Add onion and marinated chicken. Cook until nicely browned and until chicken registers 165 degrees Fahrenheit when a thermometer is inserted.
Pico De Gallo
- Add the serrano peppers, onion and salt to a mixing bowl and give it a good stir.
- Add the cilantro and mix. Add the diced Romas, lime juice and toss until all the ingredients are well mixed.
Easy Jalapeño Ranch
- Add the jalapenos plus their juice and the cilantro to a blender or food processor. Puree until smooth. Pour the ranch into a bowl and add the jalapeño puree.
Bowl Assembly
- Layer in the Spinach then the rice to create a level base. Add the remaining bowl ingredients in strips across the top.
- Serve with the jalapeño ranch—and a margarita!
