Mediterranean Watermelon Salad with Feta and Sherry-Mint Vinaigrette
This salad is truly one in a melon! Our friends at Robard's Steakhouse in The Woodlands shared this recipe for their Mediterranean Watermelon Salad with Feta and Sherry-Mint Vinaigrette, which tastes like summer on a plate!
Ingredients
Salad
- 1 in seedless watermelon cut into 1-inch chunks, draineda colander for at least 1 hour
- 6 ounces blueberries
- 1 small red onion sliced thinly
- 4 ounces feta cheese sliced into 1-inch chunks (see picture, but crumbled also works)
- Optional watercress or microgreens garnish
- Optional toasted pistachios
Sherry-Mint Dressing
- 1/2 olive oil
- 1/4 cup Sherry Vinegar
- 1 teaspoon sugar
- 1 tablespoon minced basil
- 1 tablespoon minced mint
- Salt and pepper to taste
Instructions
Sherry-Mint Dressing
- Whisk all ingredients. Add salt and pepper as desired.
Salad Assembly
- Toss watermelon with dressing. Add feta on top as pictured or crumble and sprinkle over top. Garnish with microgreens or watercress if desired. We love this salad with toasted pistachios!
