940's Kitchen & Cocktails’ Shishito Pepper Shrimp and Grits
Part bar, part bistro, 940’s Kitchen & Cocktails does shrimp and grits its own way, with shishito peppers.
Ingredients
Fontina Grits
- 3 ounces prepared grits (prepared according to package directions)
- 2 ounces fontina cheese
- 5 shishito peppers, roasted and diced (per single plate)
Shrimp
- 6 pan-seared shrimp
- 4 ounces andouille sausage
- 3 ounces chopped tomato
- 2 ounces heavy cream
- 2 ounces chipotle puree
- 1 pat butter, for mounting
- Salt and pepper to taste
- Fresh chives and chive oil for garnish (optional)
Instructions
Fontina Grits
- Prepare grits according to package directions.
- Stir in fontina cheese and diced shishito peppers.
Shrimp
- Pan-sear the shrimp and andouille sausage together, adding salt and pepper to taste.
- Add chopped tomatoes and cook well.
- In a separate sauce pan, mix the heavy cream and chipotle puree and add butter for mounting.
- Combine all ingredients in sauce pan and pour over grits.
- Garnish with chives and chive oil around edge of dish.
- Multiply by servings desired.
