Ali Miller's Mediterranean Chickpea Salad
Like the look of that marvelous Mediterranean Chickpea salad above? Chickpeas are a great source of protein and are rich in vitamins and minerals like riboflavin, niacin, thiamin, folate, and Vitamin A.
Ingredients
- 1 can chickpeas rinsed (we like Eden brand)
- 1-2 Heirloom tomatoes
- Juice of ½ lemon
- 1/8 cup Katamala Olives pitted and sliced
- Juice of 1 lemon
- 2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1/4 cup fresh chopped oregano
- 1/4 cup fresh chopped basil
Instructions
- Mix chickpeas, tomatoes, and olives toss in juice of ½ lemon. Mix lemon juice, red wine vinegar, olive oil, and fresh mixed herbs. Pour over chickpea mixture. Allow to marinate for at least 3-5 minutes before serving. This stores for up to 3-4 days!
