Austin Hippie Salad
This oh-so-Austin salad is one of Trio's most popular lunch items.
Ingredients
For the salad:
- 1 lb. spinach leaves
- 1 lb. Boston bibb shredded
- 1 lb. radicchio
- 1 cup chickpeas
- 1 cup candied pecans
- ½ cup red currants or raisins
- ½ cup smoked onion vinaigrette dressing see recipe below
- ½ cup pickled shallots
- 1½ cup avocado sliced
- ½ cup sunflower sprouts
Smoked Onion Vinaigrette:
- 1 medium red onion smoked
- 1 garlic clove
- ½ shallot
- 1 tsp kosher salt
- 2 Tbsp. Dijon
- ½ cup Red Wine Vinegar
- 1 cup canola oil
Instructions
For the Salad:
- Toss the first seven ingredients until leaves are coated with the vinaigrette. Divide evenly into four salad bowls. Garnish with the pickled shallots, avocado and sunflower sprouts.
For the Smoked Onion Vinaigrette:
- Place all ingredients in a blender except the canola oil. Blend and slowly add oil to emulsify. Keep refrigerated.
