Ingredients
Greek Dressing (Makes 1 Cup)
- 2 cloves garlic -- minced
- 1 teaspoon dried oregano
- ½ teaspoon Dijon Mustard
- ¼ cup red wine vinegar
- 2 tablespoons lemon juice
- 1 - 2 tablespoons honey
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1/2 cup olive oil
Salad Assembly
- 4-6 cups mixed greens or chopped romaine lettuce
- 1 small cucumber peeled and diced
- 12 ounces small cooked shrimp
- 10 Cherry Tomatoes cut into halves
Instructions
- Dressing: Whisk together the garlic, oregano, mustard, vinegar, lemon juice, honey, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
- Toss salad leaves, tomatoes, cucumber and cooked shrimp with dressing. Divide evenly into bowls. Serve.
