Pulled Pork by The Original Black's Barbecue
Ingredients
- 1 raw, boneless pork butt
- The Original Black's BBQ Dry Rub (or salt and pepper)
- hamburger buns
- pickles, onions, and barbecue sauce
Instructions
- Prepare the Pork Butt: Start with a boneless pork butt (also known as a pork shoulder). Cut it into 3 to 4 pieces, each roughly the size of a baseball. This step helps reduce cooking time and increases surface area for better smoke penetration.
- Season the Pork: Season the pork pieces generously with salt and black pepper on all sides. Make sure to coat them evenly.
- Preheat Your Smoker to 275°F.
- Smoke the Pork: Place the seasoned pork pieces directly on the smoker grates. Smoke the pork for about 4 to 5 hours, or until the internal temperature reaches 165°F. During this time, the pork will develop a beautiful smoky crust.
- Wrap and Continue Cooking: Transfer the smoked pork pieces to an aluminum pan. Cover the pan tightly with aluminum foil, ensuring it's sealed well to trap the steam. Place the pan back in the smoker and continue cooking at 275°F for another 2 hours, or until the internal temperature reaches 200°F and the meat is tender. This low and slow cooking process will break down the collagen, making the meat incredibly tender.
- Shred the Pork: Carefully remove the pan from the smoker and let it rest for a few minutes. Use two forks or meat claws to pull the smoked pork apart, creating a stringy, tender texture. Add any rendered fat from the pan to the pulled pork for flavor and moisture to your liking.
- Season and Serve: Taste the pulled pork and adjust the seasoning with additional salt and black pepper if needed. Serve the pulled pork on hamburger buns for classic pulled pork sandwiches, or use it as a delicious addition to your favorite sides like pinto beans, mac and cheese, or coleslaw.
