
Smoked Chicken Wings from The Original Black's Barbecue
Instructions
Prep the Wings
- Start by cutting off the wing tips - try to find the joint and use a nice sharp knife.
- Repeat the process with all of the chicken wings.
- Set aside the wing tips for later.
Season
- Season the chicken wings with salt and pepper.
- Use table salt because it dissolves quickly and penetrates deeply.
- Get a nice even coating.
- Once seasoned, place on a cooling rack.
Create the Basting Oil
- Take the wing tips and pan fry them.
- Add vegetable oil to the fried wing tips to create the oil.
Smoking
- Place the cooling rack with the chicken wings on the smoker. Smoke the wings low and slow.
- Every 20 minutes baste the wings with the wing oil. This will help the skin get nice and crispy.
- Cook the wings for about an hour to an hour and a half, until they reach an internal temperature of 165 degrees.
- Enjoy!
