Smoked Chicken Wings from The Original Black's Barbecue

Instructions
Prep the Wings
Start by cutting off the wing tips - try to find the joint and use a nice sharp knife.
Repeat the process with all of the chicken wings.
Set aside the wing tips for later.
Season
Season the chicken wings with salt and pepper.
Use table salt because it dissolves quickly and penetrates deeply.
Get a nice even coating.
Once seasoned, place on a cooling rack.
Create the Basting Oil
Take the wing tips and pan fry them.
Add vegetable oil to the fried wing tips to create the oil.
Smoking
Place the cooling rack with the chicken wings on the smoker. Smoke the wings low and slow.
Every 20 minutes baste the wings with the wing oil. This will help the skin get nice and crispy.
Cook the wings for about an hour to an hour and a half, until they reach an internal temperature of 165 degrees.
