Smoked Chicken Wings from The Original Black's Barbecue

Instructions

Prep the Wings

  • Start by cutting off the wing tips - try to find the joint and use a nice sharp knife.
  • Repeat the process with all of the chicken wings.
  • Set aside the wing tips for later.

Season

  • Season the chicken wings with salt and pepper.
  • Use table salt because it dissolves quickly and penetrates deeply.
  • Get a nice even coating.
  • Once seasoned, place on a cooling rack.

Create the Basting Oil

  • Take the wing tips and pan fry them.
  • Add vegetable oil to the fried wing tips to create the oil.

Smoking

  • Place the cooling rack with the chicken wings on the smoker. Smoke the wings low and slow.
  • Every 20 minutes baste the wings with the wing oil. This will help the skin get nice and crispy.
  • Cook the wings for about an hour to an hour and a half, until they reach an internal temperature of 165 degrees.
  • Enjoy!
