Nick's Fish Dive & Oyster Bar Green Salad with Fresh Gulf Shrimp and Greek Dressing

Ingredients
  

Greek Dressing (Makes 1 Cup)

  • 2 cloves garlic -- minced
  • 1 teaspoon dried oregano
  • ½ teaspoon Dijon Mustard
  • ¼ cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 - 2 tablespoons honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/2 cup olive oil

Salad Assembly

  • 4-6 cups mixed greens or chopped romaine lettuce
  • 1 small cucumber peeled and diced
  • 12 ounces small cooked shrimp
  • 10 Cherry Tomatoes cut into halves

Instructions
 

  • Dressing: Whisk together the garlic, oregano, mustard, vinegar, lemon juice, honey, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
  • Toss salad leaves, tomatoes, cucumber and cooked shrimp with dressing. Divide evenly into bowls. Serve.
