Sea Island Fried Fish and Shrimp

Ingredients
  

  • FOR SEASONED FLOUR
  • 1 cup flour
  • 4 tsp Kosher salt
  • 1 tsp black pepper
  • 1 Tbsp garlic powder
  • 1 tsp onion powder
  • FOR MILK WASH
  • 4 eggs
  • 2 cups milk
  • 1 tsp Kosher salt
  • 1 tsp black pepper
  • FOR FISH
  • 1 package salted crackers, crushed
  • 4 fish filets
  • oil for frying
  • FOR SHRIMP
  • 1 lb shrimp, peeled and deveined
  • 2 cups white bread crumbs
  • oil for frying
  • FOR COCKTAIL SAUCE
  • ½ cup ketchup
  • ½ cup chili sauce
  • 3 Tbsp horseradish
  • 1 Tbsp lemon juice
  • 1 Tbsp worcestershire sauce
  • ¼ tsp Kosher salt
  • 1 tsp garlic powder
  • Dash pepper
  • 1 tsp tobasco sauce

Instructions
 

  • For the fish, combine flour, kosher salt, black pepper, garlic powder, and onion powder in a medium bowl.
  • In another medium bowl, whisk 4 eggs with milk, kosher salt, and black pepper.
  • In a third bowl, add crushed crackers.
  • Dust fish filets with the seasoned flour, then dip each filet in the milk wash and then coat with the crushed saltine crackers.
  • To cook in the fryer, heat oil to 350℉ degrees and fry for 5 minutes.
  • To pan fry, add a thin layer of oil to your pan and bring to medium heat. Add fish and fry for 2½ minutes per side.
  • For the shrimp, combine flour, kosher salt, black pepper, garlic powder, and onion powder in a medium bowl.
  • In another medium bowl, whisk 4 eggs with milk, kosher salt, and black pepper.
  • In a third bowl, add white bread crumbs.
  • Toss the shrimp with the seasoned flour, dip in the milk wash, and then toss with the bread crumbs.
  • In the fryer, heat oil to 350℉ degrees and fry shrimp for 3 minutes.
  • For the cocktail sauce, mix all ingredients thoroughly and chill.
