For the fish, combine flour, kosher salt, black pepper, garlic powder, and onion powder in a medium bowl.
In another medium bowl, whisk 4 eggs with milk, kosher salt, and black pepper.
In a third bowl, add crushed crackers.
Dust fish filets with the seasoned flour, then dip each filet in the milk wash and then coat with the crushed saltine crackers.
To cook in the fryer, heat oil to 350℉ degrees and fry for 5 minutes.
To pan fry, add a thin layer of oil to your pan and bring to medium heat. Add fish and fry for 2½ minutes per side.

Toss the shrimp with the seasoned flour, dip in the milk wash, and then toss with the bread crumbs.
In the fryer, heat oil to 350℉ degrees and fry shrimp for 3 minutes.
For the cocktail sauce, mix all ingredients thoroughly and chill.
