Why do we save that special bottle of wine? What are we saving it for? That topic has been coming up a lot lately in our house, and we’ve decided…special is NOW! Life holds so many twists and turns, why not savor each moment.
So, we’ve been on a quest as of late to cook special meals and pair special wines to go with. Tonight, I prepared an incredible ‘Chicken Cacciatora’ dish from an amazing cookbook—The Splendid Table by Lynne Rossetto Kasper.
The keys to this dish – preparing the chicken the night before with a garlic, rosemary and salt rub and sautéing it very slowly in a solid cast iron pan.
Once those elements were taken care of, it came together very quickly with the red peppers, onion and white wine.
We paired the dish with a Brunello we first enjoyed in Carmel about 5 years ago, a 2002 La Fiorita Brunello. It was spectacular – tons of vanilla and spice – and the rosemary in the wine literally leaped out of the glass with the chicken dish.
