Ready those appetites for homemade tamales as big as Texas! My friend Carol Pierce with Golden Kernel Tamales made an appearance in my kitchen to share her how-to’s of assembling healthy tamales just in time for the holidays.
Carol considers the art of tamale-making an “open canvas to creation.” She’s an open book herself, passing along invaluable knowledge from own family, combined with over 30 years of experience in tamale making.
For our tamales, we’re thinking outside the realm of tradition, implementing fresh, high quality ingredients like brown rice or garbanzo bean flours into our cooking process — a GREAT source of protein.
I must say, I like a lot of filling and Carol’s tamales are easily the best I’ve had!

Recipes:
Falafel Chicken Verde Tamales:
(yields 20-24)
Filling:
In a Oven Cooking Bag add…
1 – Whole Roasting Chicken
1 – Whole White Onion
10 – Garlic Cloves Peeled
8 – Stalks Celery Chopped
Season with Poultry Season
Season with Salt
1/4 – Cup EVOO
Cook @ 350 degrees for 2 hours. Drain juices, set aside and cool for shredding then, prepare the sauce added to chicken. Blend both and add to shredded chicken:
12 Tomatillos / wash and parboil until the skin starts to peel
10 Canned Whole Jalapeños / deseeded and sliced into strips
After combining both, season to taste, and add…
4 tbsp – Cumin
2 tbsp – Salt
1 tbsp – Pepper
Set aside and prepare your Masa next.
Masa:
In a Kitchen Aid Mixer add & mix on high till blended to a dough consistency…
16oz –Â Garbanzo Flour
1 1/2 Cups – Liquid / Use your Chicken Broth and Water if needed
3 tsp – Salt
1/2 tsp – Baking Soda
2 tsp – Parsley Flakes
1 tsp – Cumin
1/2 tsp – Ground Coriander
1 tsp – Garlic Powder
1/2 tsp – Onion Powder
1 Cup – EVOO (Extra Virgin Olive Oil)
You are now ready to assemble the tamale on a cleaned, and dried oja chuck. Spread Masa and add a large spoon of the chicken filling, roll and wrap. Steam 2 hours, checking and adding more water to your pot after one hour. Let sit and cool in pot 15 minutes.
The Elvis PB & B Tamales:
(yields 20-24)
Filling:
12 Bananas – peeled and cut in half
In a medium size bowl combine…
1 Cup – Greek Yogurt
1 Cup – Creamy Natural Peanut Butter
1 Cup – Raw Honey
1 Cup – Pecans, choppedÂ
Refrigerate and prepare the masa.
Masa:
In a Kitchen Aid Mixer combine and blend…
24oz – Brown Rice Flour
1 Cup – Dark Brown Sugar
2 Sticks – Unsalted Butter
1/2 Cup – EVOO
10 oz – Apple Juice
1 tbsp – Cinnamon
1 tsp – Baking Soda
1/2 tsp – Salt
1 tsp – Vanilla
1 tbsp – Xanthan Gum
1 Egg
You are now ready to assemble the tamale on a cleaned, and dried oja chuck. Spread Masa and add 1/2 of a whole banana and top with a large spoon of the peanut butter filling, roll and wrap.
Steam 2 hours, checking and adding more water to your pot after one hour. Let sit and cool in pot 15 minutes.
