Store-bought rotisserie chicken is the easiest and fastest way to get dinner on the table. Enjoy it fresh the first night, then get creative with your leftovers for a variety of different dishes. I’m sharing two easy recipes for you to make (no cooking required), but before you get cooking, you need to debone the meat and shred it. Greek Chicken Bowl
Think of it as a deconstructed chicken gyro!
In a small bowl, whisk 1/2 cup full-fat Greek yogurt with 1 small finely grated garlic clove, a couple dashes of hot sauce, and salt and pepper. In a shallow bowl, add a bed of shredded romaine lettuce. If you have any leftover cooked grains like bulgur, quinoa, or barley, you can add a small scoop of that too. Top the bowl with shredded rotisserie chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and small cubes of feta cheese. Feel free to add some canned (rinsed) chickpeas here as well. Drizzle with a little olive oil. Top with a dollop of the spiced yogurt and garnish with crushed pita chips or plantain chips. Serve with more hot sauce on the side.

You can find jicama tortillas at your local H-E-B and most major grocery stores. Fill the jicama tortillas with shredded chicken and garnish with desired toppings, such as slaw, salsa, pico de gallo, red onion, cilantro, and fresh lime.
