It’s finally time! The great North American solar eclipse is upon us and cities and states lucky enough to fall within the path of totality are gearing up for cosmic celebrations to commemorate this once-in-a-lifetime event. If you’re in the Texas path of totality (or close to it), we know you’re excited! We are too! If you’re hosting an eclipse-viewing party at home (or need something to bring to one), you’re in luck. We’ve got some out-of-this-world galactic-themed desserts, snacks and drinks that will blast your party right out of the atmosphere!
No-Bake Galaxy Cake Pops
Cake pops are always a hit so serving these galaxy cake pops at your space party is a no-brainer! These no-bake cake pops from The Soccer Mom Blog get a cosmic makeover with galaxy swirls and edible stars. You need crumbled cake or cupcakes to make these pops. You can make that cake yourself from a box or for a truly no-bake version, grab a pre-made cake (or cupcakes) from your favorite bakery. Tip: after dipping these pops in the melted candy wafers, stick them in a foam block to dry so they stay perfectly round.
Eclipse Cupcakes
Turn your dessert table into an educational astronomy lesson with these cupcakes from SugarHero that show all the stages of a total solar eclipse. The perfectly round orange circles on the top of the cupcakes are made with buttercream frosting and yellow gel food coloring. The solar flare effect around the edges comes from orange Wilton color mist. The eclipse effect is cut from store-bought black fondant.
Homemade Moon Pies
Of course, we have to include homemade moon pies in our space-themed spread! These moon pies from Wilde in the Kitchen taste better than the real thing so they’re definitely worth the effort! Bake some graham cracker rounds, fill them with homemade vanilla marshmallow and coat them in chocolate. Delicious!
Out-Of-This-World Charcuterie Board
This is the only savory recipe in this list and boy, is it good! This far out charcuterie board from Savor Recipes includes an assortment of meats, cheeses, blue tortilla chips, grapes, blueberries, blackberries and dark chocolate. The middle is a tasty wheel of brie cheese with grape jam (and 0a star cutout of course). This is an easy one to customize to your tastes!
Blue Pineapple Solar Eclipse Cocktail
This beautiful blue pineapple solar eclipse cocktail from The Rogue Brussel Sprout is a showstopper! Add some elegance to your celestial celebration with this simple blend of pineapple juice, white rum, and lime juice. That stunning blue color is obtained by dissolving blue spirulina powder in water. You can order blue spirulina online. If not, blue food coloring will work too.
Galaxy Sugar Cookies
These playful sugar cookies from Kids Activities Blog are an explosion of celestial color! These mini galaxies are fun to make and even more fun to eat. Make your favorite sugar cookie dough (or use this recipe provided) and use violet, teal, and black food coloring to get these ultra vibrant hues! Press edible stars lightly into each cookie before baking. Simple, fun, and oh-so-tasty!
Dark Chocolate Eclipse Cake
This rich, dark, fudgy cake from Chocolate Covered Katie is perfect for health-conscious partygoers. It’s fairly easy to make and it’s vegan! The extra dark – almost black – coloring is made with Dutch cocoa, also called dark cocoa or black cocoa. The top is a thick layer of chocolate avocado frosting.
Galaxy Bark
This eye-catching galaxy bark from Momdot is almost too pretty to eat! All you need to whip up this super-easy, kid-friendly dessert is black, purple, and blue candy melts, some Wilton glitter stars, and Wilton silver pearl dust. Let the kids get in on the action for this one!
Galaxy Color-Changing Lemonade
This is another recipe that serves up a science lesson. This gorgeous color-changing lemonade from The Flavor Bender looks like a galaxy in a glass! The vibrant colors come from dark blue ice made by freezing butterfly pea flower tea in ice cube trays. That blue ice morphs from dark blue to purple to bright pink when it’s mixed with lemon (or anything acidic). Fun, educational, and delicious!
Lemon Blackberry Tartlets
These delicate solar eclipse lemon blackberry tartlets will add a sophisticated vibe to your eclipse-viewing party. These mini tarts from Eva Minette are filled with delectable lemon curd, then topped with a beautiful blackberry to show the “moon” eclipsing the “sun.” If you’re not confident in your curd-making skills, fill these tartlets with store-bought lemon curd instead.
