We’re following our fork again this week – this time to a handy pit stop for folks stuck in traffic outside Houston, in the town of Brookshire. Ernesto’s is a local favorite that’s earned its reputation the delicious way. On the menu, you’ll find plenty of Tex-Mex classics worth pulling over for: cheesy enchiladas, stuffed avocado, pollo a la perilla – a grilled chicken breast smothered in veggies and melted Monterey Jack – and the Chuy’s Dinner, a clever twist on a shish kabob (just without the skewer). Any one of these dishes will have you saying olé!
